American Pancakes (also good for waffles)

  • 1 egg white
  • Generous ½ cup plain flour
  • ½ tsp baking powder
  • pinch of salt
  • 1 tsp sugar
  • 1 egg yolk
  • 2 Tablespoons melted butter
  • ½ cup milk

This is enough for breakfast for two people.

Whisk the egg white until stiff. Mix everything  else in a separate bowl, then gentle fold the egg white into the mixture. Do one third at a time and use a metal spoon. (Both of these tips are help to stop the bubbles getting squashed..)

Cook in a buttered pan – either a few big ones or (easier) lots of medium ones.

Good with maple syrup, cream, berries or bacon.
