Banana cupcakes

Banana cupcakes
  • 3 oz butter
  • 3 oz sugar
  • 1 egg
  • 1 banana, mashed
  • 4 oz self-raising flour
  • some lemon juice

Cream butter, add sugar and cream, beat in egg, add mashed banana. Then mix in the flour and enough lemon juice to get a good consistency. Don’t mix too hard once the flour is in or the mixture will get too sticky.

It makes 6, and you do need paper muffin cups.

Cook at 180 C fan oven (a bit less for conventional) until they look crispy on top. Bake for 20-25 mins until golden on top (crispy is good!).

These are great fresh but the tops go soft after a day – still edible, but not the same!
