Blueberry Muffins

(makes 6 muffins)

  • 55g butter
  • 125g plain flour
  • 1 egg
  • 100g caster sugar
  • 65ml milk
  • 1 teaspoon baking powder
  • Pinch of salt
  • 100g blueberries

Preheat oven to 180C/160C fan. Grease and line a muffin tin or line with paper cases.

Sieve flour, baking powder and salt together and set aside. Cream butter and sugar until light and fluffy. Add egs and beat well. Add milk and flour mixture. Beat until combined. Stir in blueberries.

Fill muffin tin ⅔ full. Bake for 25-30 minutes.
