Veggie Chilli

  • Garlic
  • Chilli
  • Coriander
  • Kidney beans
  • Tinned tomatoes
  • Celery
  • Sweet potato
  • Mushrooms
  • Peppers
  • Red wine
  • Salt, pepper, cumin, paprika and cayenne pepper

Simmer beans with tomatoes and wine. Fry up the garlic, chilli, chopped coriander stalks, sweet potato and mushrooms. Add to the beans along with celery and peppers. Season and allow to simmer for 20 minutes. Serve with rice, garnish with guacamole, sour cream, grated cheese and coriander.

This is also a good filling for wraps. Or make nachos Рheat the mixture  first, then put tortilla chips and grated cheese on top and put it under the the grill.
