Broccoli, Avocado & Lime Salad

Serves 3

  • 2 Ripe avocados
  • 1 Broccoli head
  • Handful of fresh coriander
  • 2 Limes
  • 1 Tablespoons of tahini
  • 2 Tablespoons of olive oil
  • 1 teaspoon of tamari (or 2 of shoyu)
  • 1 teaspoon of honey or maple syrup
  • a pinch of salt (omit if you’ve used shoyu, as it is saltier than tamari)

Slice the broccoli into small, bite-sized pieces and steam them for about 7 mins, until cooked but a little crunchy. Plunge them into cold water, ideally with a few ice cube in it, so that they cool quickly and keep their green colour. When they are cool, put them in a colander or sieve to drain.

Cut the avocado into small cubes. Chop the coriander. Put them in a salad bowl with the drained broccoli.

Squeeze the limes and mix the juice in a cup with all the other dressing ingredients then pour it over the salad and mix.
