Cardamon Carrot Cake

Cardamon Carrot Cake
  • 4 oz flour
  • 1 tsp bicarbonate of soda
  • 1 egg
  • ¼ teaspoon ground cardamon (or about 5 pods opened up and crushed)
  • 5 oz brown sugar
  • 2 oz butter (or half butter and half oil)
  • 8 oz grated carrot
  • 3 oz almonds (best skinned, but not crucial)
  • 1½ oz raisins

Mix, starting with butter and sugar, then egg, then everything else.

Cook in a loaf tin – either non-stick and greased or normal – greased and lined with greaseproof paper.

Bake at 180 C for 40-45 mins
