Jester’s Vegetable Slice

This is something you made at Ann Welsh’s and which we’ve never tried ourselves.

  • 400 g grated courgette
  • 1 medium carrot, grated
  • 1 cup grated cheese
  • 1 small sweet potato, grated
  • 1 medium onion, finely chopped
  • 1 cup (180 g) self-raising flour
  • 5 eggs
  • ¼ cup olive oil

Mix all the veg and cheese together and then mix in the flour. Separately, beat up the eggs with the oil and then stir it into the veg.

Line a baking tray (24x34cm) with baking paper and spread the mixture onto it.

Bake at 180 C (fan) for 25 mins. Cool and air on a cake rack.

Serve warm or cold I think.
