Waldorf Salad

Roughly equal amounts of:

  • Chopped apple – crispy ones, red is good for colour
  • Red or black seedless grapes
  • Chopped celery

Smaller amounts of:

  • Small chunks cheddar cheese
  • Broken walnuts (or pecans)
  • Soft dates, chopped

As soon as you cut the apple, toss the chunks in lemon juice to stop them going brown. If you don’t like the taste of the lemon on the apple use a mixture of half lemon juice and half water.

Dress with mayonnaise – either from a jar or made to our recipe. Some people use yogurt instead – maybe a thick Greek yogurt and some lemon juice? Don’t over-do the dressing.

This is a really good winter salad. It’s worth getting organic celery as the taste makes a big difference. You can cut the grapes but they last better if you don’t. This salad keeps fine overnight.
