Celeriac Mash

Mashed potatoes with a difference. Celeriac works really well when combined with potatoes – roughly half and half. Peel the potatoes and cut them into large bits (or leave them whole if they are small ones). With the celeriac, cut off the amount you want, then wash it a bit and cut off all of the dirty outside layer – there’s no way of scrubbing it effectively. Then cut it into small chunks. The celeriac bits need to be smaller than the potato so that everything will be cooked to the right amount at the same time. Boil it all up in salted water until the potatoes are done (celeriac will not go so soft, that’s OK). Then mash up as you normally would with butter and milk (or cream) and salt and pepper.
