The eponymous Macaroni Cheese

  • Macaroni
  • Butter
  • Plain flour
  • Milk
  • Cheddar cheese
  • Salt and pepper if you like, but there is usually enough salt in the cheese

Boil up some macaroni in salted water (undercook slightly). Drain when done and add a bit of oil to stop it sticking together if you are going to leave it for more than a minute or so before mixing with the sauce.

Grate some cheese. Warm a bit of milk in a microwave.

Put some butter in a small pan and add about half the volume of plain flour. Stir it up until it is bubbling nicely and smells a bit toasty. Then add some of the warm milk and beat it in, add a bit more and beat, and again. Then you can use cold milk to get it to the thickness you want. Add the cheese and warm through – add more milk if it needs it.

Put the cheese sauce in with the drained macaroni and mix up.  Enjoy!

Of course, you can bake the macaroni if you want. To do this, make the sauce really runny and put it all in an oven dish with some extra cheese on top (or cheese and breadcrumbs mixed).  Cook for maybe 20 mins in an oven about 180 C (need to try this). You could even grill it at the end to make the top crispy.
