Ultimate spaghetti carbonara
This is for four people. Use only one egg for one person or two for two. The method seems to be crucial – getting rid of the crushed garlic clove and putting the cooked spaghetti into the frying pan to soak up all the oil. Bacon works instead of pancetta but do fry it until crispy. You need quite a lot of cooking water with the egg – I think it might work to mix them together before putting the mixture into the pan. Grate the cheese finely if you can as it doesn’t have much time to melt.
