Liam’s Sweet Potato in a Cayenne, Ginger and Groundnut Sauce
This is my favorite recipe from my favorite recipe book, World Food Cafe by Chris & Carolyn Caldicott, which appropriately was given to me on my 18th birthday. It’s delicious, healthy, and fairly cheap and easy to make. It also scales up well–I’ve made it for groups of 15-20 before. The garnish is optional–the dish is great without it.
