An alternate filling for fajitas, or great on their own!
- x2 tins of beans (traditionally it’s meant to be pinto but I usually use cannelloni. anything works)
- Olive oil
- Salt and pepper
- Cumin, paprika and cayenne
- Chipotle tabasco
- Chopped jalapenos
- Red pepper
Heat up the olive oil in a frying pan. Add the garlic and onion and cook until soft. Then add everything else to the pan. Add a little water if necessary. Use a potato masher to mash the beans – I like to leave some chunks. Then fry the beans, stirring occasionally, until they start to stick and you get yummy burnt bits! Remove from the pan and set aside. Chop the red pepper and cook it in the same pan until slightly charred. Then eat in wraps or enjoy on its own.
