Saugage Ragu

I made this from my recipe book today and I actually like it a lot more than bolognese with beef mince- it’s super tasty!


  • Pork sausages
  • Olive oil
  • Garlic
  • Onions
  • Fennel seeds, mixed herbs
  • Chopped tomatoes
  • Red wine
  • Salt and pepper
  • Pasta (recipe recommends pappardelle)
  • Parmesan to serve

The recipe doesn’t include mushrooms, but I added some!


Slit the sausage skins open and place the sausage meat into a large bowl. Crumble it up with your hands so that it looks like breadcrumbs. Add herbs. Heat up oil in a saucepan, add the sausage meat and cook for 10 minutes or until browned. Add the onion and garlic to the pan and cook until softened. Pour in the tinned tomatoes and wine, season with salt and pepper and leave to simmer gently for 45 minutes until the sauce is thick. Cook the pasta, drain it and add it to the saucepan. Serve with grated parmesan.
