Baked fish (cod) with a lemon & herb crust

  • Thick pieces of white fish like cod or haddock (not thin pieces, or they cook before the crust does)
  • Serrano ham (optional, Martin’s idea…)
  • About 20g of fine white breadcrumbs per portion
  • Finely chopped fresh herbs – parsley and lemon thyme are good. Quite a lot of herbs – by volume at least as much as the breadcrumbs after they are chopped.
  • 1 garlic clove per portion – finely chopped
  • Lemon zest and juice – to taste – about half a lemon per portion
  • Salt & pepper
  • Olive oil

Preheat oven to 180C fan

Put a little oil in the bottom of a baking dish (just to stop sticking). Drizzle the lemon juice over the fish. If you are using ham, wrap it right around the pieces of fish and put the fish in the dish. Mix up the breadcrumb mixture with the other ingredients and scatter it onto the top of the fish/ham.

Bake, uncovered for about 20 mins, finishing under the grill if the crust needs crisping.

Very easy and good! It would be interesting to try with different herbs.
