German Honey Bars

  • 1/3 cup honey
  • 1/4 cup sugar
  • 2 tabs butter
  • 1 cup plain flour
  • 1/2 tsp baking powder
  • 1/4 tsp bicarb
  • 1/4 cup almonds, blanched
  • 1/4 cup candied peel
  • 1/4 tsp sugar
  • 1/4 tsp cardamon
  • 1 tsp cinnamon
  • 1/4-1/2 cup more flour

Preheat oven to 170C fan and grease a brownie tin (8×8 inch).

Put the honey, sugar and butter in a pan and heat gently until sugar is melted. Then add everything else except the extra flour and mix. It should make a sticky dough – add extra flour to get there.

Spread the dough out in the tin and bake for 20-25 mins until lightly brown. Leave to cool for a few minutes, then tip out onto a board and cut into squares.

These are quite dense – a bit like gingerbread. They keep very well in an airtight tin. Could use more spice – try some cloves and nutmeg perhaps.
