Chorizo Pasta

Have been making this as an easy weeknight dinner, good way to use up chorizo.


  • Chorizo
  • Chilli
  • Red onion
  • Garlic
  • Sour cream
  • Pasta
  • Tomatoes


  1. Fry up chopped garlic, chilli and red onion in olive oil. Once soft, add chopped chorizo and cook for a few mins.
  2. Add either fresh or tinned tomatoes, simmer until thickened. Season with salt and pepper.
  3. Stir in a little sour cream and some starchy pasta water to bind the sauce.
  4. Mix with pasta and serve!
