Buffalo Cauliflower

This is a bit complicated to make, but it’s fun and really yummy.

Ingredients:

  • 1 head of cauliflower
  • 1/2 cup water
  • 1/2 cup milk
  • 1 cup flour
  • 2 tsp garlic powder
  • 1 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp ground pepper

Buffalo sauce:

  • 2/3 cup hot pepper sauce
  • 1/2 cup butter
  • 1.5 tbsp white vinegar
  • 1/4 tsp Worcestershire sauce
  • 1/4 tsp cayenne pepper
  • 1/8 tsp garlic powder

Ranch dressing:

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • Herbs – chives, dill, parsley
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 3/4 cup buttermilk, or regular whole milk

Method:

Preheat oven to 200 degrees and line baking tray with parchment paper.

Wash and cut cauliflower into bite-sized pieces.

Mix the milk, flour, water, and spices together. Dip the cauliflower in the batter until coated. Shake off excess batter before placing cauliflower on baking sheet.

Bake for 20 minutes until golden brown, flipping it over halfway through.

While it is baking, make your buffalo sauce. Over a low heat, melt the butter, and then add other ingredients. Stir together then set aside.

Once the cauliflower is ready, remove them from the oven and toss them in the sauce. Return to the over for another 10-15 minutes until crispy.

Serve with ranch dressing – make this buy whisking together mayonnaise, sour cream, and all of the seasonings. Whisk in milk until smooth. Chill before serving.
