Egg fried rice

Yummy and easy weeknight dinner – and great way of using up rice! The rice definitely has to be made ahead of time.

Ingredients:

  • Rice (cooked beforehand)
  • Sesame oil
  • Onion
  • Garlic
  • Ginger
  • Egg
  • Tofu
  • Soy sauce

Any veg will do, but my favourites are:

  • Pak choi
  • Pepper
  • Peas
  • Mushrooms
  • Baby corn
  • Broccoli
  • Spring onions

Method:

Fry up onions, garlic and ginger in sesame oil until soft. Add veg and cook until soft. Add tofu and rice and fry until cooked through. Whisk up the eggs and add to the rice, cook for a minute or so. Add soy sauce at the end, and enjoy!
