Ingredients (makes around 30):

  • 250 grams plain flour
  • 165 grams granulated sugar
  • 1 tablespoon honey
  • 1 teaspoon baking powder
  • 1 teaspoon grated orange zest
  • squeeze of orange juice
  • 1 teaspoon amaretto or 1/2 teaspoon almond extract
  • 2 eggs
  • 125 grams whole almonds


Preheat Oven to 180 degrees C.

In a large bowl, combine all the dry ingredients (except almonds).

In a small bowl, beat together eggs, honey, orange zest and amaretto.

Combine the the ingredients and mix until you have a crumbly, soft mixture. At this point it was too dry for me so I added a squeeze of orange juice! Add the almonds and mix together

Transfer dough onto a lightly floured surface and roll it into two logs that are approximately 30cm long and 5cm wide.

Place the logs on a baking tray lined with paper and bake for 30 mins until golden brown.

Remove the logs from the oven and let them cool for around 10 minutes

Place log on cutting board and using a sharp, serrated knife, cut diagonally into 1.5cm slices.

Put the cookies back on the baking sheet and bake for 10-15 mins.

Remove Cantucci from oven and leave to cool on wire rack.

Store in sealed container for several weeks. Enjoy!
