Thai summer rolls

These are super easy and very adaptable. They’re a really fun packed lunch!

Ingredients:

  • Rice paper wraps (can get these at Chinese supermarkets)
  • Peanut sauce (recipe here)
  • Tofu
  • Pickled radishes are nice!
  • Fresh herbs – coriander, mint, basil

You can use any raw veg, but crunchy ones are nice for texture. They all need to be julienned.

  • Carrot
  • Cucumber
  • Red pepper
  • Red cabbage
  • Radish
  • Avocado
  • Would be nice with prawns too!

Method:

Place rice paper wrap flat in a bowl of water until it goes soft and sticky. Assemble the veg in the middle of the wrap, then roll up like a little burrito. If you’re taking them somewhere, it’s easier to spread the sauce inside the wrap rather than dipping it.
