Chickpea ‘tuna’ mayo

Made this the other day – nice as a quick sandwich filling and super tasty!!

Ingredients:

  • 1 tin chickpeas
  • 1/2 red onion
  • 1 celery stick
  • 3 tbsp mayonnaise
  • 1/2 lemon
  • 1 tbsp capers (i used jalapenos instead)
  • 1 tsp wholegrain mustard
  • 3 tbsp sweetcorn
  • Garlic salt and black pepper
  • 1 tbsp fresh parsley, finely chopped

Method:

  1. Place drained chickpeas in large bowl and mash with fork until broken down.
  2. Finely chop red onion, celery and roughly chop capers. Add to the chickpeas.
  3. Add the mayo, lemon juice, sweetcorn, mustard and parsley. Stir until combined.
  4. Taste and season with salt and pepper.
  5. Serve as sandwich filling!
