Loin of lamb

Heat oven to 180 degrees fan.

This is for a small rolled loin of lamb (2 portion size). Pat the meat dry and salt it lightly. Put some sunflower oil in a pan and when it is hot, put the meat in. Keep it on one side until the fat has rendered down and started to brown, then turn and do the next bit. Keep going until all sides are brown. It will take about 5 mins. Then put in an oven-proof dish and roast in the oven for 25-30 mins. Then take out and let it rest for a bit.

You can use the hot oil-fat mixture in the frying pan to gently heat some garlic cloves through and coat rosemary – then put them in with the meat for the last 10 mins.
