Broccoli Pasta

Really simple yummy pasta dish that Guilia made. Reminded me of DP’s Broccoli Noodles!

  • 1 head of broccoli
  • 2 cloves of garlic
  • Cream
  • Pasta
  • Salt and pepper
  • Squeeze of lemon
  • Parmesan

  1. Cut up the broccoli, separating the stem and the florets.
  2. Roughly chop the stem and steam them for 20 minutes or until soft.
  3. Chop up the florets into little pieces and put them on a baking tray, drizzle with oil, salt and pepper and bake in the oven for 20-25 mins. 180 degrees fan.
  4. Fry up some chopped garlic in a pan. Once golden, pour in the cream and heat through so flavours infuse. (Note from Anna, I skipped the infusing step, just blitzed everything in the blender and heated it through gently just before mixing with the pasta)
  5. Pour the infused cream into a bowl and add the steamed broccoli stem. Blitz with hand blender until smooth.
  6. Put the pasta on to boil.
  7. When everything is ready, combine the cooked pasta with the sauce and two tablespoons of pasta water. Sprinkle the crispy florets over the top, and season with salt, pepper, and parmesan.
