Salad of baby courgettes with preserved lemon
- Baby courgette, sliced into long thin pieces
- Preserved lemon cut into small bits, remove pips
- Olive oil
- Fresh herbs (I used thyme and mint which was a good combination)
- A good bunch of chives, or some spring onion, or red onion cut fine, or garlic.
Mix and serve!
Could experiment with different ways of cutting the the courgette or even use a mandoline. A few sultanas soaked in water first might work as an addition.
