Martin’s roast mixed vegetables
- Red onion (or normal)
- Peppers – quartered
- Olive oil
- Balsamic vinegar
Need to get some details here, but essentially roasted for about 25 mins at about 180 degrees. The thing that worked really well was sitting the onion and red pepper like little bowls and putting some shoyu on the onions and balsamic vinegar on the peppers. Everything was tossed in olive oil and a little salt first.
