Green sauce to go with steak! Also works with other meats and fish. The ingredients can be played around with a bit.
- Bunch parsley
- Half as much tarragon
- 2 small garlic cloves
- 3 tsp dijon mustard
- 2 tbsp capers
- 200 ml olive oil
- 2 tbsp sherry or red wine vinegar
Chop herbs and garlic as finely as possible then combine with other ingredients.
Other recipes generally include anchovies, which is really nice. Sometimes the herbs change – basil and mint are commonly used as well. A little bit of lemon might be nice too!
